Autumn baking


What do we do when there is more dirty laundry than clean?  When the dishwasher seems to be constantly running and there is still a pile of stuff on the counter?  Why, bake, of course!  Yesterday Owen and I made these zucchini-banana-flaxseed muffins*.  Wow - slice 'em in half and slather a little butter on one side and you've got yourself a winner.  I'd never used ground flaxseeds before - just the whole kind which my kids flat out won't eat if they see telltale signs.  (You don't even want to know what they think they look like, though I bet you're trying to guess right now!)  The muffins are dense but moist and chewy and just slightly sweet.  Perfect for breakfast or an afterschool snack. The fact that there are only two left and we made them yesterday afternoon would seem to substantiate my claim.

Yesterday morning Owen walked out in his camo underpants and said, "I wish we could go someplace where I could blend in in my underwear."  I offered to drop him in a jungle somewhere, but he decided to get dressed instead.

everyday food is the best! i may have to try these (even though i'm terrible at baking!)
