Good enough to eat

Whoever invented lunch was smart. Today I made a fritatta with zucchini, ham and two cheeses. It didn't last long - even Owen ate a slice, so it must have been pretty good. I guess these things are closer to "brunch" meals, but it sure beats endless rounds of chicken nuggets and peanut butter jelly sandwiches. Good way to get a few veggies into the kids, too. I'm trying to get back into the cooking habit. I confess I've gotten lazy since the holidays ended, but I feel like maybe I'm getting some of my vim and verve back. Now what to make for dinner...
